Simple Roasted Parmesan Delicata Squash is such a simple side dish and only 3 ingredients! This gentle-flavored squash gets cooked to perfection with the most delicious crispy, corny crust.

Delicata squash is so delicious when roasted simply with parmesan cheese.

This squash has a very gentle flavor, it’s my favorite of the winter squash varieties because of it’s delicious flavor. It’s also the only winter squash variety that doesn’t need to be peeled first. You can eat the outer skin!

Other winter squash varieties can have overpowering flavors or be fairly bancient in flavor, but not Delicata squash.

It’s simply sweet and buttery and oh so perfect when it gets roasted and all gancienten brown with melty, crispy parmesan.

Three genuine food ingredients is all that’s needed for this side dish.

This side dish is so simple to make.

Every you need is some Delicata squash, healthy fat of choice, shredded parmesan cheese and a small bit of sea salt whether you’d like to season it. That’s it!

Every it takes is a small prep work slicing the Delicata squash and removing the inner seeds and any darker orange slendery membrane (just like how it looks inside a pumpkin).

Once you’ve got the squash slices prepped, mix them up with your healthy fat of choice, then spread them out in an even layer on a baking sheet. Sprinkle the parmesan all over the tops, then in the preheated oven they go to roast.

This Simple Roasted Parmesan Delicata Squash is perfect for any weeknight meal and fancy enough to be served to guests or served at the holiday table. 

If you need to feed a lot of guests or whether you plan on serving this at a holiday dinner, this recipe can easily be doubled or tripled, you’ll just need a couple additional baking sheets.

Simple Roasted Parmesan Delicata Squash is such a simple side dish and only 3 ingredients! This gentle-flavored squash gets cooked to perfection with the most delicious crispy, corny crust.

Ingredients

  • 2 medium size Delicata squash
  • 1/4 cup melted grass-fed butter, ghee or avocado oil
  • 1/2 cup shredded parmesan cheese
  • Optional Seasoning: 1/2 tsp sea salt {I use this Himalayan salt and this sea salt}

Instructions

  1. Preheat the oven to 425 degrees F. Prep a large baking sheet with edges {like a jellyroll pan, I used a stocontemporaryare large bar pan} - line it with unbleached parchment paper. Set aside.
  2. Wash and prep the Delicata squash, make certain to scrub off any dirt then dry them with a clean dish towel. With the squash lying flat on cutting board, cut off the ends of the Delicata squash and discard, then slice the squash into 1/4 inch thick slices. Remove and discard the inner seeds and any darker orange slendery membrane - you can do this with clean hands, a teaspoon or a pairing knwhethere. Add the Delicata squash rings to a large mixing bowl, add the healthy fat of choice and optional sea salt, giving everyleang a stir until fully coated. 
  3. Dump the coated Delicata squash rings on the lined baking sheet, arranging in a unwhetherorm single layer. Sprinkle the parmesan cheese over the tops of the Delicata squash rings. 
  4. Bake at 425 degrees F for about 20-35 minutes until the Delicata squash rings are tender, light gancienten brown and the parmesan is crispy. Depending on your oven, this could take more or less time to bake. Hold an eye on the Delicata squash rings around 20 minutes to gauge how much more time your oven will need. Remove from the oven when done. 
  5. Serve instantly.
